This thick and low fat soup is a simple, inexpensive and quick-to make comfort food.
1 pound extra lean ground beef
1 tabs olive oil1/4 cup chopped onion
2 garlic cloves, minced
1/4 cup minced fresh parsley
2 cups of water
1 cube beef bouillon
1 cup canned tomatoes sauce
Pepper to taste
1 cup uncooked orzo or small shell pasta
In a large pot, cook the ground beef and onion in oil over medium heat until meat is no longer pink; drain.
Add garlic, parsley, tomato sauce and cook for 1 minute. Stir in beef bouillon and the water and bring to a boil.
Add the Orzo pasta and reduce heat.
Cover and simmer for 15-20 minutes or until pasta is tender (Stir occasionally to keep the pasta pieces from sticking to each other or the pot).
Prep: 5 min.
Cook: 25 min.
